60 minutes
Serves:
6 people
Ingredients:
5 eggs (large size, at room temperature)
3/4 cup sugar
2 cups all-purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
Pinch of salt
1 tsp vinegar
1 cup milk
1/2 cup butter (at room temperature)
1/4 cup vegetable oil
1 tsp vanilla extract (liquid)
1 tbsp butter (for greasing the pan)
1 tbsp flour (for dusting the pan)
Powdered sugar (for dusting, optional)
Instructions:
Preheat the oven to 180°C (350°F).
Grease your cake pan with butter and lightly dust it with flour to prevent sticking.
Separate the egg whites from the yolks.
In a large mixing bowl, whisk the egg whites with the sugar and vinegar until the mixture is creamy and pale in color. This will help achieve a light and airy texture for the cake.
Gradually add the egg yolks, milk, butter, oil, and vanilla extract. Mix gently until everything is well combined.
Sift in the flour, baking powder, baking soda, and salt. Add these dry ingredients gradually while mixing gently to avoid deflating the batter.
Pour the batter into the prepared cake pan.
Place the pan in the preheated oven. Do not open the oven door during baking to prevent the cake from collapsing.
Test for doneness by inserting a wooden skewer into the center of the cake. If it comes out clean, the cake is fully baked.
Remove the cake from the oven and allow it to cool completely in the pan before removing.
Once the cake has cooled, dust with powdered sugar (optional) for decoration.
Enjoy!
Serve the cake as is or with your favorite frosting, jam, or fruit filling. This soft, fluffy sponge cake will surely delight everyone at the table!
