4 eggplants (peeled and cut into thick slices)
450g minced meat
4 tablespoons vegetable oil
1 teaspoon salt
½ teaspoon black pepper
1 onion (chopped)
2 garlic cloves (chopped)
¾ cup red pepper paste
2 tomatoes (chopped)
3 green peppers (chopped)
2 ½ cups water
Instructions:
Preheat the oven to 180°C (350°F).
Place the eggplant slices on a baking tray, drizzle with oil, and sprinkle half of the salt and black pepper over them.
Bake the eggplant in the oven for about 25 minutes.
In a skillet, sauté the chopped onion and garlic in a bit of oil until softened.
Add the minced meat and cook, stirring occasionally, for several minutes until browned.
Add the red pepper paste, chopped tomatoes, and green peppers. Stir well.
Pour in the water and add the remaining salt and black pepper. Stir and let it simmer for 5 more minutes.
Spread the minced meat sauce over the baked eggplant slices in the tray.
Bake the dish again in the oven for 20 minutes until the Moussaka is fully cooked.
Serve the Moussaka hot and enjoy!
