Vegetable Soup with Oats for Weight Loss

Serves: 4 people
Ingredients:

1 cup oats
1 tbsp vegetable oil
2 cloves garlic (minced)
1 carrot (diced)
1 zucchini (diced)
1 broccoli head (chopped)
½ cup celery (chopped)
4 cups chicken broth
Salt (to taste)
Black pepper (to taste)
Fresh coriander (chopped, for garnish)
Instructions:

Sauté the Aromatics:

In a deep pot, heat the vegetable oil over medium heat. Add the garlic and sauté until fragrant and the onion becomes soft.

Add the Vegetables:

Add the carrot, zucchini, broccoli, and celery to the pot. Stir and sauté for about 2 minutes to combine the flavors.

Cook the Soup:

Add the oats and chicken broth to the pot. Stir well and season with salt and black pepper according to your taste.
Cover the pot and bring the mixture to a boil. Once it’s boiling, reduce the heat to medium and let it simmer for 20-25 minutes, or until the oats and vegetables are fully cooked and tender.

Serve:

Ladle the hot soup into bowls. Garnish with freshly chopped coriander for an extra burst of flavor.
