Total Time:
Cooking Time: 60 minutes
Servings: Serves 4 people
Ingredients:
1 kg fresh squid (cleaned and prepared)
½ cup vegetable oil
1 medium onion (chopped)
1 garlic clove (chopped)
Fresh red chili (chopped, to taste)
1 tsp cumin
½ tsp turmeric
¼ tsp black pepper
4 tbsp tomato paste
1 cup fish stock (or water)
1 lemon (juice)
Salt to taste
Fresh parsley (chopped, for garnish)
Preparation Steps:
Prepare the Squid:
Clean the squid thoroughly by washing it with salt, vinegar, and water. Slice it into rings.
Marinate the Squid:
In a bowl, mix the lemon juice, cumin, turmeric, black pepper, and salt.
Add the squid rings to the marinade and let it sit for 15 minutes.
Fry the Squid:
Heat the vegetable oil in a large pan over medium heat.
Fry the squid rings until they turn golden and crispy. Once done, remove them and drain any excess oil on paper towels.
Prepare the Sauce:
In the same pan, add the chopped onion, garlic, and red chili. Sauté until the onion becomes soft and translucent.
Add the tomato paste and stir for a minute until the paste is well mixed.
Pour in the fish stock (or water), add the remaining lemon juice, and adjust the salt to taste. Let the sauce simmer for 5 minutes until it thickens.
Combine the Squid and Sauce:
Gently add the fried squid rings into the sauce. Stir carefully to coat the squid with the sauce, and cook for an additional 2-3 minutes to allow the flavors to meld.
Serve:
Transfer the squid with hot sauce to a serving dish and garnish with freshly chopped parsley.
Serve hot, ideally with a side of white rice.
Serving Suggestion:
Pair this spicy squid with a side of steamed rice or bread to soak up the flavorful sauce.
Enjoy this flavorful and spicy squid dish!
