Spicy Indian-Style Chicken

Ingredients:
For the sauce:

2 tomatoes (chopped)
1 onion (chopped)
½ tsp garlic (minced)
½ tsp ginger (minced)
2 tbsp vegetable oil
½ tsp ground coriander
A pinch of cumin
1 green chili (chopped)
1 tsp red chili powder
A pinch of salt
For the chicken marinade:
500g chicken breast (cut into pieces)
1 small container of yogurt
1 tbsp lemon juice
½ tsp ginger (minced)
1 tsp garlic (minced)
1 tsp turmeric powder
1 tsp curry powder
1 tsp paprika (hot)
½ tsp ground coriander
½ tsp cumin powder
1 tbsp red chili powder (or to taste)
A pinch of salt
2 tbsp sesame oil (or vegetable oil)
Instructions:

Marinate the chicken:

In a bowl, combine the chicken pieces with yogurt, lemon juice, minced ginger, garlic, turmeric, curry powder, paprika, ground coriander, cumin, red chili powder, and salt.
Mix well and cover the bowl. Let the chicken marinate in the refrigerator for at least 2 hours (or overnight for more flavor).

Cook the chicken:

Heat a little oil in a wide pan over medium heat.
Remove the marinated chicken from the bowl and add it to the pan.
Cook the chicken until it is golden brown and cooked through.

Prepare the sauce:

Heat oil in a separate pot, then add the chopped onion, garlic, and ginger. Sauté until the onion becomes soft and translucent.
Add the chopped tomatoes, spices (coriander, cumin, and red chili powder), and a pinch of salt. Stir and cook for about 5 minutes.
Add a little water to create a sauce and let it simmer until it thickens.

Combine the chicken and sauce:

Add the tomato sauce to the cooked chicken. Stir well so that the chicken absorbs the sauce.
Cover the pot and cook for another 10 minutes to allow the flavors to meld together.

Serve:

Serve the spicy chicken hot with basmati rice for a complete meal.
