Potatoes are a nutritious vegetable that contains a high amount of starch, and they can be prepared in many ways, such as by frying or boiling. People following a diet often enjoy potatoes but are concerned about weight gain due to the high calorie content, especially when fried. Here's a healthy, lighter version of baked potatoes that’s delicious and easy to prepare.
Prep Time:10 minutesCook Time:40 minutesServes:3 peopleIngredients:
Potatoes: 4 medium-sized (cut into thick slices)
Lemon juice: 2 tablespoons
Olive oil: 1 tablespoon
Rosemary: 1 teaspoon
Thyme: ½ teaspoon
Salt: to taste
Instructions:
Preheat the oven to 220°C (430°F).
In a medium-sized pot, boil plenty of water over medium heat, then turn off the heat once it starts boiling.
Add the potato slices to the hot water and season with a pinch of salt. Let them soak for 2 minutes in the hot water to soften slightly.
Drain the potato slices and transfer them to a bowl.
In a separate bowl, mix together the lemon juice, olive oil, rosemary, thyme, and salt to create the marinade.
Pour the marinade over the potato slices and toss well to coat all the pieces evenly.
Arrange the seasoned potatoes in a single layer on a baking sheet or oven-safe dish.
Bake in the preheated oven for about 25 minutes, or until the potatoes are golden and crispy on the outside.
Remove from the oven and serve the baked potatoes hot.
Enjoy your healthy, diet-friendly baked potatoes! You can serve them as a side dish or enjoy them as a light meal.
