Ingredients:
For the Marinade:

1 teaspoon cumin

For the Fish:
2 fresh mackerel (washed and cleaned)
2 onions (sliced into rings)
2 tomatoes (sliced)
2 colored bell peppers (sliced)
1 lemon (sliced)
Instructions:
Prepare the Marinade:

In a bowl, mix all the marinade ingredients together until well combined.
Marinate the Fish:
Wash the fish thoroughly and pat it dry. Place the fish in the marinade, making sure it is completely coated. Let the fish marinate for at least 30 minutes.
Preheat the Grill:
Preheat the oven’s grill setting. In a baking tray, arrange the sliced onions, bell peppers, and tomatoes.
Grill the Fish:
Place the marinated fish on top of the vegetables in the baking tray. Pour any leftover marinade over the fish and vegetables.
Cook:
Grill the fish until it is fully cooked and golden brown, about 15-20 minutes depending on the size of the fish.
Serve:
Serve the grilled fish hot with the roasted vegetables and white rice. Garnish the dish with lemon slices before serving.

Tip:
For an extra flavor boost, you can drizzle some extra olive oil over the grilled fish before serving or sprinkle some fresh coriander on top for garnish.
