Ingredients:
For the Marinade:
1 cup yogurt
1/2 cup olive oil
1/2 cup olive oil (same as above)
3 garlic cloves (mashed)
Juice of 1 lemon
2 tablespoons dried coriander (ground)
1 teaspoon paprika
1 tablespoon cumin
1 tablespoon cumin (same as above)
1 teaspoon turmeric
1 teaspoon black pepper
1 teaspoon cinnamon
Salt to taste
For the Chicken:
8 chicken thighs (well-washed)
Instructions:
In a large bowl, mix all the marinade ingredients thoroughly: yogurt, olive oil, mashed garlic, lemon juice, dried coriander, salt, black pepper, turmeric, cumin, paprika, and cinnamon.
Place the chicken thighs in the marinade and ensure they are well-coated on all sides.
Let the chicken marinate in the refrigerator for at least two hours, or overnight for the best flavors.
Heat the charcoal grill well.
Wrap the marinated chicken pieces in aluminum foil and place them on the grill. Keep turning the chicken occasionally until it is cooked evenly.
After the chicken is cooked through, open the foil and leave the chicken on the grill for an additional 5 minutes to achieve a golden, crispy texture.
Serve the Madhbi hot with basmati rice and a green salad.
